Potato & Corn Fritters
These fritters are similar to the previous Veges Fritters, but we use some delicious Indian spices to give a really nice flavour to these fritters. These spices go beautifully with the corn and potato, particularly when those veges are straight from the garden! We serve them with a Raita. YUM
350g potato
3 cobs corn
1 red onion
4 eggs
1 cup plain flour
1 Tbsp cornflour
1/2 tsp turmeric powder
1/2 tsp cumin powder
1 tsp garam masala
salt & pepper
Grate potato (don’t bother peeling), cut kernels off corn, finely dice onion and mix all vegetables with the cracked eggs
Add dry ingredients and mix until combined
Fry in large spoonfuls until browned, turn and flatten slightly and cook until that side is browned as well
Place on paper towels to drain
Serve with Raita
