Cinnamon Scrolls
I usually try and make healthy snacks, but every now and again i can’t help but make these. Don’t be put off by the recipe, they are actually very easy to make, and everyone will love them!
3/4 cup warm milk
2 1/2 tsp dry yeast
1/4 cup sugar
1 egg + 1 egg yolk
60g butter, melted
3 cups bread flour
1/2 tsp salt
2/3 cup brown sugar
2 tsp cinnamon
60g butter, softened
Put warm milk, yeast and sugar in mixer bowl. Mix and let sit for 5 mins, the yeast should start bubbling
Add eggs and butter, then flour and salt
Mix with dough hook until combined, then knead for 6 minutes. if you don’t have a mixer, knead with your hands on a well floured surface
Make dough into a ball in the bowl, cover with glad wrap, and place somewhere warm for 1 - 2 hours until doubled in size
In a small bowl, mix together brown sugar, cinnamon and butter
On a well-floured surface, roll dough into a 22x40cm rectangle and spread with butter mixture, leaving a margin along one 40cm side. Start rolling from the other side making sure the roll is nice and tight
Cut into 12 even slices. I find this easiest if I use a very sharp serrated knife. Place evenly in a paper lined baking tray, cover and leave in a warm place for an hour or so until doubled in size.
Preheat oven to 180C, and cook rolls for 15-20 minutes until nicely browned. Yum!
