Vege Fritters
These fritters are delicious straight out of the pan, with a yummy fresh Raita. The kids also love them in their lunch boxes - something to think about in the next few weeks with school returning. They are also great for a nice quick lunch.
1 zucchini
1/2 sweet potato
1 large potato
1/2 onion
3 eggs
1 cup plain flour
2 Tbsp cornflour
salt & pepper
oil
Grate zucchini, place in a clean tea towel or paper towel and squeeze as much water out of it as you can
Mix with thinly sliced onion, grated potato, grated sweet potato, eggs and salt & pepper
Add flours and mix until all combined
Fry large spoonfuls in a little oil until browned, then turn over and cook other side
Serve with Raita:
1/2 cucumber, grated and water squeezed out
1 cup yoghurt
1 tsp fresh mint &/or dill, chopped finely
Mix all together
