Little Cheesy Bites

These are just yum. I make them for class and for home, and don’t know anyone that doesn’t like them. Bam up the spice if you want, or tone it right down for the kiddies.

  • 2 cups plain flour

  • 4 Tbsp SR Flour

  • 1 tsp salt

  • 1/4 - 1/2 tsp cayenne pepper

  • 250g cheddar/tasty cheese, grated

  • 4 Tbsp parmesan, grated

  • 250g butter, grated

  • 4 Tbsp lemon juice (and extra)

Measure all ingredients into bowl and rub with fingertips until it looks like breadcrumbs, grating the butter makes this process so much easier!

Add lemon juice until all comes together as a ball of dough. Sometimes this may require a lot more lemon juice. Depends on the weather (and how many hot little hands are in there rubbing butter in)

This is where I usually make two logs from the dough. Wrap one and pop in fridge for 20 mins, wrap and freeze the other one to use another time

Preheat oven 180C

Take out of fridge and slice into rounds about 1/2 cm thick. Place on paper lined tray and bake 10-15 mins until golden

*If you don’t want to make logs, you can just make small balls and flatten them a little before baking. I find the logs so much easier
