Beetroot Brownies

Beetroot Brownies

Need a ‘healthy’ hit of chocolate? Here it is! Make sure you use a good quality dark chocolate and cocoa if you can. The beetroot gives these brownies an awesome colour and earthy flavour.

  • 175g butter, coarsely chopped

  • 225g dark brown sugar

  • 200g dark chocolate, chopped (or smashed in packet)

  • 200g beetroot (1 medium), grated

  • 3 eggs

  • 75g plain flour

  • 35g cocoa powder

Preheat oven to 180C and line a 20 x 30 cm tin with baking paper

Combine butter and brown sugar in a saucepan and heat gently until melted. Take off heat and add chocolate and stir until melted

Mix all ingredients together and stir until just combined. Pour into baking tin and smooth top

Bake 18-20 mins until just firm, a little less if you prefer it more fudgy

Cool in tin, then cut into squares

Dust with icing sugar if desired

*Can cook in cupcake size for something different, just reduce cooking time
