Whole Orange Cupcakes
These use whole a orange, so great for no wastage! It also gives them a slight bite, and they’re not as sweet as cupcakes usually are. Decorate them with a dusting of icing sugar, or a basic orange icing. I like to leave them plain, as I like to think that make them healthier! The whole recipe can be done in a food processor if you have one. I only have a small one at home, so I puree the orange and do the rest in a bowl.
1 whole orange
180g butter, melted
3 eggs
1 cup caster sugar
1 & 1/2 cups SR flour
Preheat oven to 180C, and line cupcake tray with patty pans
Cut orange into pieces, remove any seeds you might find and blitz in the food processor until relatively smooth
Add eggs and sugar to food processor and blitz for a few seconds
Add melted butter and blitz until combined - don’t overmix!
2/3 fill patty cases - I use an ice cream scoop, saves on spills
Cook for around 15 mins until a skewer inserted comes out clean
Cool & eat!
