Plum Crumble Galette

Stonefruit season is amazing. Warm weather (hopefully - though being in Melbourne doesn’t guarantee anything) and plums, nectarines, peaches, cherries and apricots. Any of which can be substituted for the plums in the recipe. Serve warm, with ice cream or cream. Also nice cold, and good in lunch boxes! When I make this in class, I use 2 sheets of pastry joined together and double the ingredients. It will fit onto a large baking sheet and feed a crowd (or a class)

  • 1 sheet shortcrust pastry

  • 3/4 cup rolled oats

  • 1/4 cup brown sugar

  • 2 Tbsp butter

  • 2 Tbsp SR flour

  • 1/2 tsp cinnamon

  • 1/8 tsp nutmeg

  • 1/8 tsp ground ginger

  • 6 plums, stoned and cut into 1/8’s

Lay pastry on paper lined baking sheet

Put all other ingredients excepts plums into bowl and rub with fingertips until there are no big lumps of butter and everything is combined

Place crumble mix on pastry, leaving a small border around edge

Place plums on top of crumble mix, and fold sides over neatly

Bake 20-30 mins until pastry is browned and fruit is cooked through

Pizza with Summer Veges
