Pesto
Usually made with basil, pretty much any herb or nut can be substituted to make a pesto that makes the easiest pasta sauce. Mix with some mayo or aioli for a delicious chip dipping sauce or dollop on some steak! Keep covered with a little extra oil in the freezer, and you can also add garlic if you like.
1 large bunch basil
1/2 cup parmesan, grated
salt, pepper
2 Tbsp lemon juice and a little grated rind
1/4 cup toasted pine nuts
Olive oil (1/4 to 1/2 cup)
Put all ingredients except olive oil in food processor, and blitz - adding oil as needed until a nice paste forms. If you like it a bit chunky, don’t blitz too long!
