Pesto Pasta Salad
A great use of some freshly made pesto, and makes a salad that keeps well, and is great for lunch boxes. I use risoni which is a pasta that is shaped a bit like rice, but any small pasta will work.
1/2 cup risoni pasta, cooked as per packet instructions
1 punnet cherry tomatoes, halved - or diced larger tomatoes
1 cucumber, diced
1 capsicum, diced
a few handfuls lettuce, kale or any salad leaves (kale will keep longer), sliced if needed
4 Tbsp pesto
Mix cooked pasta with cherry tomatoes
Add pesto, mix well and add the rest of the ingredients
