Pumpkin Soda Bread
This is a very similar recipe to the previous Herby Soda Bread, but uses grated pumpkin and paprika to flavour it instead of herbs. Don’t forget to make your own ‘buttermilk’. Such a quick way to make a loaf of bread, as it uses Bicarb soda instead of yeast, and doesn’t need any proving time.
150g pumpkin
1 + 1/2 cups plain flour
1 + 1/2 cups wholemeal flour
1 + 1/2 tsp bicarb soda
1 tsp salt
1/2 tsp sugar
1 tsp paprika
1 cup buttermilk*
extra buttermilk for brushing
Preheat oven to 220C, and get baking tray ready with baking paper covering
Grate pumpkin, add to bowl with dry ingredients
Add buttermilk and mix until it all comes together
Slightly knead dough into a ball, place on baking tray and flatten until about 3cm high
Score a large cross into the top and brush with extra buttermilk
Bake in oven for 20-25 mins until browned and crusty
* To make your own buttermilk, put 1/4 cup vinegar in a jug and add 1 + 1/4 cups milk. Let sit until needed
